Aussie Bites Copycat Recipe

If you’ve never tried Aussie Bites, they’re quite amazing. They are surprisingly sweet, buttery, and very satisfying. They are the ultimate pre- or post-workout snack; but my family loves snacking on them pretty much all the time.

You see, my 14 year old son is a bottomless pit, my daughter can’t seem to keep any weight on her, and Evan (my SO) has the highest metabolism I’ve ever witnessed.

These little snacks pack quite a nutritious punch so they’re perfect for school lunches and just grabbing throughout the day.

We can’t seem to get enough of them at Costco so we got to work in the kitchen coming up with Aussie Bites copycat recipe:

  • Coconut oil
  • Baking soda
  • Sea salt
  • Sugar (optional) — this was an update because the original recipe wasn’t sweet enough for our taste

Blend on low for about 8 seconds or until the fruits are about the size of grains of rice.

Fruit mixture in a Blendtec blender.

Combine all the ingredients in a large bowl and stir until fully mixed.

Place tablespoon sized scoops into a silicone mini muffin pan. Press down to flatten them into the pan. This is important so they stick together while baking.

Bake for 10 minutes.

Let the bites cool for at least five minutes before removing from the pan.

Gently pop them out of your muffin pan.

Make sure they completely cool before storing them in a sealed container. Ours lasted about a month in a sealed, plastic container.

Ingredients

  • 1 cup dried apricots, chopped
  • 1/3 cup golden raisins, chopped
  • 1/2 cup butter
  • 1/4 cup water
  • 1 tsp vanilla
  • 1 3/4 cup rolled oats
  • 2 cups oat flour
  • 1/3 cup quinoa (precooked)
  • 1 tbsp chia seeds
  • 1/4 cup flax seeds
  • 2 tbsp sunflower seeds
  • 2 tbsp coconut sugar
  • 2 tbsp honey
  • 1 tbsp coconut flakes
  • 1/4 cup canola oil
  • 1/4 cup coconut oil
  • 1 1/2 tsp baking soda
  • pinch sea salt
  • 1/4 cup sugar (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Precook the quinoa.
  3. Combine the butter, apricots, raisins, vanilla, and water in a pot. Heat over medium until the butter is melted. (This softens and moistens the dried fruits so they're easier to blend.)
  4. Put this mixture into your Blendtec. If you don't have one, you should 😉
  5. Blend on low for about 8 seconds or until the dried fruits are about the size of grains of rice.
  6. In a large bowl, combine all the ingredients and stir until fully mixed. (UPDATE: we added an additional 1/4 cup of regular white sugar because these weren't quite sweet enough for our taste.)
  7. Put tablespoon size scoops into a silicone mini muffin pan. Flatten down the mixture into the muffin pan (important).
  8. Bake at 350 degrees for 10 minutes.
  9. Let cool for 5 minutes before removing.
  10. Cool completely before storing in a sealed container. (Ours lasted about a month in a sealed plastic container.)

    1. Hi Val,
Did you really smash them into the muffin tin or whatever mold you were using. I found it helpful to make sure they were really compressed before baking. Otherwise, I wouldn’t bake too long or they may dry out. You could add a bit more of the sticky ingredients and decrease the butter.

      I hope that helps! 🙂

  8. I had Aussie Bites from Costco a few weeks ago and almost cried when I found your copy cat recipe on Pinterest! I was SO happy! That’s how good they are! I’ve made this recipe twice – one following the recipe fully and once with half the butter it calls for and the other half applesauce as a substitute. Both ways came out great! Next time I’ll try using all applesauce and no butter.
    Thank you!

    1. Hi Mary,

I don’t see why not, they just might crumble a little easier in that shape. Maybe add something sticky like applesauce or more honey to help hold them together?

  9. While I appreciate the recipe, it may actually be a little flawed in the directions. You must precook the quinoa and you must flatten down the mixture into the mini muffin sheet. Two very important things not shared. I came out with a crumbly expensive and time consuming mess! I hope you all are reading reviews!!

    1. I wish I had read your comment before I made these! The same happened to me.
Good flavor, but just crumbs. Though, I still want to make them.

    2. I’m very sorry about this. I hate to hear you wasted expensive ingredients. I’ve update the instructions to precook the quinoa and flatten into the pan. Please know that I appreciate your comment and feedback, and again, apologies for your experience.

      1. Dear Jennifer.
Thank you for the update! I’m going to try the recipe again & let you & others know how it goes.

    1. This post needs to be updated and put into a recipe card! I will do that ASAP and that will calculate the macros. Apologies and thank you for bringing it to my attention. 🙂

  10. These are delightful! I actually like the flavor better than Costco. They do fall apart easily so i think i will add an egg or two next time i make it.
    These really are fabulous!
    Thanks so much for posting!
